Ingredients

  • 1 Large Broccoli
  • 115 g /4oz Stilton
  • 1 Tsp Garlic Puree/Paste
  • 2 Tsp Bouquet Garni
  • Salt & Pepper

Instructions

  • Pour into your soup maker 300ml of cold water.
  • Remove the leaves and any big stalks from the broccoli and chop into small florets. Load them into the soup maker.
  • Add about 90% of your stilton to the soup maker, along your garlic and seasonings.
  • Once the soup maker beeps that it is done, decide how much water is left and add enough extra water to make it into a creamy broccoli soup. Using the blender setting, blend the soup until smooth.
  • Crumble in the rest of your stilton and serve warm.

Notes

Broccoli is incredibly thick when making into a soup. Therefore, you need a lot more water in a broccoli soup compared to making pumpkin or a tomato soup.
What I did was cook the broccoli stilton soup with 300ml (1.25 Cups) of water, then when it was cooked and during the blending process, I added another 200ml (almost 1 Cup). But it depends on how much broccoli you have, to how thick you want it to how much water you will need.
