These roast potatoes remind me of the pan and oven version. I.e. you would boil the potatoes first and then toss them in oil (or butter) and then oven bake.

The Ninja Foodi (or multicooker version) is that you are doing a quick steam to partly cook the potatoes and then air frying in a little oil.

Ninja Foodi Roast Potatoes

Equipment

Ingredients

  • 6 Large White Potatoes
  • 360 ml /1.5 Cups Vegetable Stock we make our stock in the instant pot
  • 2 Tsp Duck Fat/Goose Fat
  • 1 Tsp Thyme
  • 1 Tsp Rosemary
  • Salt & Pepper
  • Extra Virgin Olive Oil Spray

Instructions

  • Add your vegetable stock to the bottom of your Ninja Foodi cooking pot and peel and dice your potatoes into roast potatoes.
  • Load the potatoes into the air fryer basket and load the air fryer basket into the Ninja Foodi. Season well with salt and pepper.
  • Place the lid on the Ninja Foodi set the valve to sealing and pressure cook for 0 minutes. Do a quick pressure release and remove the liquid from below the air fryer basket.
  • Add seasoning and duck fat to the potatoes and mix with a silicone spatula as it will be too hot for your hands.
  • Place the air fryer lid down on the Ninja Foodi and cook for 20 minutes at 200c/400f. Halfway through shake the roast potatoes (for an even cook) and if they are not getting crispy fast enough add some extra virgin olive oil spray.

Notes

Freezer. These roast potatoes are freezer friendly. Load into Ziploc bags and freeze once cool.
Basket. I recommend you use the air fryer basket, that way you don’t have two accessories to clean and its perfect for pressure cooking with as well as air frying.
Stock. If you need gravy, then I recommend you save the stock to go towards a gravy.
