Have you made lasagne soup before? Its like a lazy way to enjoy your favourite lasagne and perfect for busy weeknights.

Very popular among the slow cooker crowd, so you may wonder why we are cooking this in our Ninja Foodi aka multicooker?

Well we have made this a Ninja Foodi lasagne soup because then we can add a garlic bread topping, sauté more and enjoy the different functions of the Ninja Foodi.

Ninja Foodi Lasagne Soup

Equipment

Ingredients

  • 500 g /1lb Minced Beef/Ground Beef
  • 250 g /1 Cup Passata
  • 400 g /14oz Can Finely Chopped Tomatoes
  • 500 g /2 Cups Pasta Sauce 1 large jar
  • 300 g /10oz Pack Fresh Lasagne Sheets
  • 115 g /4oz Grated Mature/Sharp Cheddar Cheese
  • 1 Medium Brown Onion
  • 1 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp Tomato Puree/Paste
  • 2 Tbsp Garlic Puree/Paste
  • 1 Tbsp Dried Basil
  • 2 Tbsp Mixed Herbs/Italian Seasoning
  • Salt & Pepper
  • Garlic Bread Baguette optional

Instructions

  • Press sauté and as it warms up peel and dice the onion and add it with a drizzle of olive oil.
  • When the onions have softened, add the mince and lightly brown the mince.
  • Cancel sauté, add passata, tomatoes, purees and seasonings. Generously season with salt and pepper.
  • Slow cook for 3 hours on high.
  • Stir then add the cheese, tomato pasta sauce, then refill the jar with water, shake and add the liquid.
  • Using scissors cut the lasagne sheets into 2cm wide strips. Stir into the bolognese and then place the lid back on.
  • Slow cook for another hour before serving.
  • Plan b – instead of serving straight away at the end cover in garlic bread slices from a baguette. Using the air fry setting air fry at 180c/360f for 8 minutes before serving.

Notes

Mix and match. Instead of the garlic bread baguette you can also decorate the top with croutons but if doing this reduce the final cook time down from 8 minutes to 4.
