Ingredients

  • 6 Lamb Shoulder Chops
  • 450 g /1lb White Potatoes
  • 1 Large Lemon
  • Salt & Pepper

Greek Marinade:

  • 1 Tbsp Extra Virgin Olive Oil
  • 1 Medium Lemon juice and rind

Instructions

  • Peel and dice your potatoes into roast potato shapes. Peel your garlic cloves and place them into a bag with the other marinade ingredients.
  • Add the potatoes and lamb chops into the bag and shake well until the marinade is well covered. Place in the fridge for 2 hours to marinate or overnight if you can.
  • Layer your lamb chops on one of the air fryer oven trays and season with salt and pepper. In the gaps add half of your garlic cloves from the leftover marinade and your sliced lemon. On the other air fryer oven shelf add your potatoes as well as the last of the garlic cloves.
  • Place the shelves into your air fryer oven, set the time and temp to 180c/360f for 25 minutes. Serve.

Notes

Chops. We cooked our Greek lamb chops in an air fryer oven, but this recipe can also be used for the regular air fryer, you will just need to place your air fryer lamb chops over your potatoes.
Size. The size of the lamb shoulder chops that we cooked varied from small at 142g/5oz to large at 210g/7oz.
Marinate. Greek lamb chops taste best the longer they marinate in the fridge in their bag. But if you are short of time 2 hours is fine. Or if you like make ahead meals, then prep the ingredients the night before and leave them in the fridge until the next day for cooking.
