Originally inspired from when I was gifted a Caribbean cooking book and just felt in love with pumpkin couscous.

Air Fryer Jerk Chicken & Pumpkin Couscous

Ingredients

Pumpkin Couscous:

  • 180 g /1 Cup Couscous
  • 115 g /4oz Pumpkin
  • 240 ml /1 Cup Coconut Water
  • 1 Small Red Onion
  • 1 Tsp Dried Parsley
  • Salt & Pepper

Jerk Chicken:

  • 4 Medium Chicken Breasts
  • 1 Tbsp Extra Virgin Olive Oil
  • 10 g Jerk Dry Rub

Instructions

  • Pumpkin Couscous – Thinly slice your pumpkin into small cubes and season with salt and pepper. Place in the air fryer and cook for 10 minutes on 200c/400f. Peel and dice a red onion and place it into a pan with lid, along with the couscous. Add the couscous seasonings, coconut water and when it beeps add the pumpkin too. Stir. Pour in 2 cups of boiling water and stir again. Place the lid on the pan and keep the lid on for 10 minutes. When the 10 minutes is up remove the lid stir and its ready for serving.
  • Jerk Chicken – Place the chicken breasts on a chopping board, drizzle with extra virgin olive oil.
  • Rub in the jerk seasoning. Cook for 15 minutes at 180c/360f, followed by a further 3 minutes at 200c/400f.
  • Serve the jerk chicken over the pumpkin couscous.

Notes

Rules. Remember the golden rules with couscous – Add double the liquid to the amount of couscous. Also note that it increases in size and 1 cup will easily feed four of you for lunch. As well as this place a lid on it and leave it for 10 minutes and it is DONE.
Cooked. To check to see if the chicken is cooked, slice it at the thickest part. If it is not hot and white, then give it a couple more minutes.
