Slow Cooker Game Casserole
If you love stews and casseroles, then you must try a slow cooker game casserole. You can use any game you like, it can become a delicious hearty one pot slow cooker meal, plus the leftovers make a delicious pie.
This game casserole is made with diced pheasant, but easy to mix and match with any game and plan your game meat like we will show you how to do.

Slow Cooker Game Casserole

- 1 kg /2.2lb Mixed Diced Game Meat
- 1 Medium Swede/Rutabaga
- 6 Medium Carrots
- 200 g /7oz Mushrooms
- 1 Brown Onion
- 880 ml /3.5 Cups/2 Cans Guinness
- 3 Instant Pot Beef Stock Cubes
- 1 Tbsp Extra Virgin Olive Oil
- 2 Tsp Dried Parsley
- 1 Tbsp Bouquet Garni
- Salt & Pepper
Instructions
- Peel and slice the onion and chop the bacon into chunks. Place the slow cooker on sauté, or onto the stove depending on your slow cooker. Add the olive oil and let it sizzle and sauté as you prep.

- While you wait prep the veggies and peel and dice the carrots and swede and quarter the mushrooms. When the onions have some colour and the bacon is starting to crisp, add in the game meat and stir and allow it to brown on all sides.

- After the browning of the game meat, cancel sauté and then pour in the beer and mix and scrape the edges.

- Add all other ingredients to the slow cooker, mix and place the lid on the slow cooker. Slow cook on high for 4 hours.

- After 4 hours do a fork test to make sure the carrots are fork tender. Stir and then serve.
