Equipment

  • Microwave
  • Air Fryer

Ingredients

  • 4 Large Baking Potatoes
  • Salt & Pepper
  • Extra Virgin Olive Oil Spray

Instructions

  • Fork the potatoes and then place them directly into the microwave. Microwave the potatoes for 16 minutes on full power. Check that the potatoes are fork tender, then transfer to a plate and allow to cool enough for you to be able to touch them. The fridge for 10 minutes is good for this.
  • Then spray the potatoes with olive oil and season generously with salt and pepper. Use your hands to oil and season the potato skins.
  • Transfer the potatoes to the air fryer basket, spreading them out. If you have a dual you may need to do 2 in each drawer.
  • Air fry the baking potatoes for 10 minutes at 180c/360f, when the air fryer beeps turn them over and then cook for a final 5 minutes at the same temperature. Load up with toppings and serve.

Notes
