Pressure Cooker Baby Carrots

Equipment

  • Electric Pressure Cooker
  • Steamer

Ingredients

  • 450 g /1lb Baby Carrots peeled and washed
  • 1 Tbsp Honey
  • 1 Tsp Extra Virgin Olive Oil
  • Salt & Pepper

Instructions

  • Place 240ml/1 cup of water into the bottom of the pressure cooker inner pot. Add the trivet/steamer shelf and place your steamer basket on top.
  • Add your baby carrots to the steamer basket and season them with salt. Place the lid on the pressure cooker, set the valve to sealing and cook for 0 minutes.
  • While it pressure cooks mix together the honey, salt and pepper and olive oil.
  • Manually release pressure when it beeps and load your baby carrots into the marinade bowl and mix well. Serve warm or cold.

Notes

Honey. If your honey is really thick, I recommend adding in a teaspoon of cold water to help it mix better or extra olive oil. You can go oil free and replace it with water.
