This air fryer curry is delicious. The easiest ever curry in air fryer and made with sweet potatoes, chickpeas, spinach, and a creamy tikka masala sauce. If you love a curry, and want an easy one to make first, then this air fryer curry recipe is for you.
Peel and dice the sweet potato into small cubes. Place into a mixing bowl with a teaspoon of coriander, a generous seasoning of salt and pepper and the olive oil.
Mix well with your hands and place in the air fryer and spread out for an even cook. Air fry, the sweet potatoes for 20 minutes at 180c/360f or until fork tender.
Add the chickpeas and ¼ tsp of garam masala. Shake the air fryer or mix with a spatula for an even coating. Air fry for another 5 minutes at the same temperature.
In the meantime, prepare your sauce ingredients. Microwave the spinach for 3 minutes on full power if not thawed already, then use your hands to squeeze out the excess moisture.
Add all the sauce ingredients with the chickpeas and sweet potatoes into a container, or directly in the bottom of the Ninja Dual and mix well.
Air fry the curry for 10 minutes at 180c/360f or until piping hot and reduced.
When it is ready it will have a curry colour to it and the sweet potato will be a little crispy on touch.
