Air Fryer Homemade Pop Tarts

I love pop tarts but did you know you can make your own air fryer homemade pop tarts?

A bit of homemade pastry (our shortcrust pastry recipe of course) lots of jam and then that famous icing and sprinkles on top.

Or the cheats method, simply swap the pastry for some tortilla wraps and you have a fun pop tarts alternative.

Equipment

Ingredients

Pop Tart Pastry:

  • 250 g /2 Cups Plain Flour/All Purpose Flour
  • 2.5 Tbsp Granulated Sugar
  • 125 g /0.5 Cup Unsalted Butter
  • 5 Tsp Soft Brown Sugar

Pop Tart Filling:

  • 8 Tsp Strawberry Jam
  • ½ Small Egg egg wash

Pop Tart Topping:

  • 2 Tsp Strawberry Jam
  • 140 g /5oz Soft Cheese/Cream Cheese
  • 5 Tsp Icing Sugar/Confectioners Sugar

Instructions

  • Roll out your pastry and get it to moderately thin, as remember it is going to be doubling in size and you don’t want them too thick. Using a knife cut them up into pop tart shapes and add a thin layer of jam to the centre of half of them. Flour the worktop, your hands and your rolling pin so that nothing sticks.
  • Using your fingers spread the jam around the piece of pastry leaving a ½ cm gap around the edge, so that you don’t have a jam explosion.
  • Place the second layer over the bottom layer and fork the outside edge. Brush with egg wash.
  • Place in the air fryer and cook for 7 minutes at 180c/360f.
  • In the meantime, make your delicious topping. In a bowl using a hand mixer, mix the icing sugar into the soft cheese. Add in the strawberry jam and mix a little bit more. When the pop tarts have cooled a little pour the mixture over your pop tarts and serve.

Notes

You can use just brown sugar in your sweet pastry, but I find it makes it a bit too bland.
I use a little spare jam to the topping it saves on using red colouring and gives a better flavour and texture.
