Pressure Cooker Sweet Mashed Potatoes

- 3 kg /6lb Sweet Potatoes peeled and cubed
- 600 ml /2.5 Cups Veggie Stock
- 2 Tbsp Salted Butter
- 1 Tbsp Bouquet Garni/Mixed Herbs/Italian Seasoning
- Salt & Pepper
Instructions
- Place 2.5 cups (600ml) of veggie stock into your inner pot. Add your peeled and diced sweet potatoes and mix with your hands. Add to the top of the sweet potatoes half of the butter, cut into cubes along with the seasonings.

- Place the lid on the instant pot pressure cooker, set the valve to sealing and pressure cook for 10 minutes followed by a quick pressure release.

- After a quick pressure release, drain the sweet potatoes with a mesh strainer and then transform into mashed sweet potatoes. Do a taste test and adjust with extra seasoning if needed.
